This study was conducted to evaluate the effect of red-wine grape pomaces on the quality and sensory attributes of beef hamburger patties. Both phenolic content and antioxidant activity were assessed using Syrah, Merlot and Cabernet Sauvignon pomaces. Following the assessment, hamburger patties were prepared with Merlot pomace at 0%, 2% and 4% for the patty quality and sensory attributes. Grape seeds possessed significantly higher phenolics and antioxidant activities over the seedless pomace (P < 0.05), whereas no significant difference was found for phenolics and antioxidant activities within the seeds and seedless pomaces. The patty pH decreased as the pomace was added for 2% and 4%. Colour values (L*, a* and b*) of patties lowered as the pomace was added. Allo-Kramer shear force and hardness values increased while cooking yield decreased (P < 0.05) with the addition of pomace. No significant difference between control and Merlot patties was found for flavour, juiciness and colour, whereas lower sensory attributes were observed for texture, taste and overall acceptability. It is observed that the addition of fermented red-wine grape pomace provides hamburger patties with health promoting factors such as antioxidant and other functional components, but it also provided darker, sourer and lower cooking yield.  相似文献

Sensory and physical properties of 2 lemon-flavored beverages with 5% and 7.5% wt/wt nonfat dry milk (NFDM) at pH 2.5 were studied during storage. The 2 beverages had similar volatile compounds, but the 5% NFDM had higher aroma and lemon flavor, with a preferred appearance by consumers due to the lower turbidity and viscosity. After 28 d of storage at 4°C, lemon flavor decreased in the 5% NFDM beverage but was still more intense than the 7.5% one. During 70 d of storage, no microorganisms were detected, and the beverages were more stable when stored at 4°C than at room temperature according to changes of physical properties measured for appearance, turbidity, color, particle size, zeta potential, rheological properties, and transmission electron microscopy morphology. Findings of the present study suggest that NFDM may be used at 5% wt/wt to produce stable acidic dairy beverages with low turbidity when stored at 4°C.  相似文献

Lactobacillus reuteri fortified camel milk infant formula (CMIF) was produced. The effect of encapsulation in different matrices (sodium alginate and galacto-oligosaccharides) via spray drying, simulated infant gastrointestinal digestion (SIGID), and storage conditions (temperature and humidity) on the viability of L. reuteri in CMIF and the physicochemical properties of CMIF were evaluated. Compared with free cells, probiotic cell viability was significantly enhanced against SIGID conditions upon encapsulation. However, L. reuteri viability in CMIF decreased after 60 d of storage, predominantly at higher storage humidity and temperature levels. At the end of the storage period, significant changes in the color values were observed in all CMIF, with a reduction in their greenness, an increase in yellowness, and a wide variation in their whiteness. Moreover, pH values and caking behavior of all CMIF stored at higher temperature (40°C) and humidity [water activity (aw) = 0.52] levels were found to be significantly higher than the samples stored under other conditions. Over 30 d of storage at lower humidity conditions (aw = 0.11 and 0.33) and room temperature (25°C), no significant increase in CMIF lipid oxidation rates was noted. Fourier-transform infrared spectroscopy analysis showed that, compared with the other storage conditions, CMIF experienced fewer changes in functional groups when stored at aw = 0.11. Microscopic images showed typical morphological characteristics of milk powder, with round to spherical-shaped particles. Overall, camel milk fortified with encapsulated L. reuteri can be suggested as a promising alternative in infant formula industries, potentially able to maintain its physicochemical characteristics as well as viability of probiotic cells when stored at low humidity levels (aw = 0.11) and temperature (25°C), over 60 d of storage.  相似文献

Gelatin is one of the most important multifunctional biopolymers and is widely used as an essential ingredient in food, pharmaceutical, and cosmetics. Porcine gelatin is regarded as the leading source of gelatin globally then followed by bovine gelatin. Porcine sources are favored over other sources since they are less expensive. However, porcine gelatin is religiously prohibited to be consumed by Muslims and the Jewish community. It is predicted that the global demand for gelatin will increase significantly in the future. Therefore, a sustainable source of gelatin with efficient production and free of disease transmission must be developed. The highest quality of Bovidae-based gelatin (BG) was acquired through alkaline pretreatment, which displayed excellent physicochemical and rheological properties. The utilization of mammalian- and plant-based enzyme significantly increased the gelatin yield. The emulsifying and foaming properties of BG also showed good stability when incorporated into food and pharmaceutical products. Manipulation of extraction conditions has enabled the development of custom-made gelatin with desired properties. This review highlighted the various modifications of extraction and processing methods to improve the physicochemical and functional properties of Bovidae-based gelatin. An in-depth analysis of the crucial stage of collagen breakdown is also discussed, which involved acid, alkaline, and enzyme pretreatment, respectively. In addition, the unique characteristics and primary qualities of BG including protein content, amphoteric property, gel strength, emulsifying and viscosity properties, and foaming ability were presented. Finally, the applications and prospects of BG as the preferred gelatin source globally were outlined.  相似文献

Flash vacuum-expansion (FVE) was assessed as an alternative to conventional techniques for Manila mango processing, which is a highly perishable variety.MethodologyThe impact of different thermal exposure times, followed by cold storage, on carotenoids, enzymatic activity of polyphenol oxidase (PPO) and peroxidase (POD), as well as antioxidant and color properties was evaluated. Results and discussion - an increase in heat intake promoted the isomerization of all-trans into all-cis forms but allowed products with considerable amounts of provitamin A to be obtained, in addition to achieving complete inhibition of PPO and POD after processing. During storage, great stability of the carotenoids, a greater conservation of the antioxidant and color properties, and a partial recovery of POD activity were observed.ConclusionFVE showed it's a viable alternative by retaining more than 58% of all-trans-β-carotene and inducing enzymatic inactivation which resulted in greater stability of quality properties of the final product.Industrial relevanceThe transformation of “Manila” mango into puree is a viable alternative for the use and management of this variety, whose physiological characteristics make it highly perishable. The results obtained in the present study show the ability of the flash vacuum-expansion process (FVE) to obtain a minimally processed product, without additives, capable of preserving considerable contents of carotenoids, as well as provitamin A equivalents, also achieving the inactivation of endogenous enzymes responsible for deterioration of quality and an increase in color stability and antioxidant properties. The results could be used by the food industry as a basis for the application of FVE during the transformation of Manila mango, reducing postharvest losses, and allow obtaining a more stable product with greater commercial attractiveness.  相似文献

PurposeTo determine if there is diurnal variation in gene expression in normal healthy conjunctival cells.MethodsBulbar conjunctival swab samples were collected from four healthy subjects in the morning and evening of the same day. The two swab samples were taken from one eye of each participant, with a minimum of five hours gap between the two samples. RNA was extracted and analysed using RNA sequencing (RNA-Seq).ResultsA total of 121 genes were differentially expressed between the morning and the evening conjunctival samples, of which 94 genes were upregulated in the morning, and 27 genes were upregulated in the evening. Many of the genes that were upregulated in the morning were involved in defence, cell turnover and regulation of gene expression, while the genes upregulated in the evening were involved in signalling and mucin production.ConclusionsThis study has identified several genes whose expression changes over the course of the day. Knowledge of diurnal variations of conjunctival gene expression provides an insight into the regulatory status of the healthy eye and provides a baseline for examining changes during ocular surface disease.  相似文献

A novel method of hydrofluidisation food freezing is numerically investigated in this paper. This technique is based on freezing small food products in a liquid medium under highly turbulent flow conditions when the heat transfer coefficient is higher than 1 000 W⋅m−2⋅K−1, which depends on the operating and flow conditions. A numerical model was developed to characterise the freezing process in terms of the heat transfer and diffusion of liquid solution components into the food product. The study investigates the freezing process of spherical samples in binary solutions of ethanol (30%) and glycerol (40%) and ternary solution of ethanol and glucose (15%/25%). The developed model was employed to determine the concentration of the liquid solution in food samples and to quantify the effect of sample size, heat transfer coefficient, solution temperature and concentration on the process. The food sample size varied from 5 to 30 mm, and the heat transfer coefficients varied from 1 000 to 4 000 W⋅ m−2⋅ K−1. The results confirm that a freezing time of 15 min for 30 mm diameter samples or less than 1 min for 5 mm diameter samples can be achieved with the hydrofluidisation method. The solution uptake was influenced by the solution type, sample size and process parameters and varied from 8.9 to 35 g of solute per kg of product for ethanol-glucose and glycerol solutions, respectively. This paper quantifies the advantages and possible limitations of hydrofluidisation, which has not yet been entirely studied, especially in terms of the mass absorption of different solutes.  相似文献
